Recipe for halloumi, pomegranate and aubergine dish

Ingredients

2-3 tablespoons of lemon infused olive oil

1 courgette diced

1 red pepper diced

1 aubergine sliced length ways

100g pomegranate seeds

250g halloumi cheese cut in to ½ cm slices

Balsamic vinegar

250g Quinoa or wild rice

METHOD

- Slice the aubergine thinly and lay on a lined roasting tray brush one side with the lemon olive oil using a pastry brush and roast in the roasting oven of the AGA or an electric oven at 200 C for approx 10 mins just till it starts to colour

- Heat a teaspoon of olive oil in a frying pan or wok and add the courgette and red pepper fry on a medium heat for 5-7 mins

- Once the vegetables are cooked place to one side and fry the halloumi on both sides till it starts to brown a little

- Cook the quinoa or rice as per the packet’s instructions, place the grains in a large bowl and add the cooked veggies, pomegranate and halloumi and serve
